Creamy Vegan Tomato Soup
Cold days call for comfort food! This plant-based tomato soup is rich, creamy, and perfect for pairing with a grilled cheese (vegan or otherwise!).
What You Need:
1 tbsp olive oil
1 small onion, diced
3 cloves garlic, minced
1 can (28 oz) crushed tomatoes
2 cups vegetable broth
1 can (14 oz) coconut milk (for creaminess)
1 tsp dried oregano
½ tsp red pepper flakes (optional)
Salt & pepper to taste
Handful of fresh basil, chopped
How to Make It:
Heat olive oil in a pot, sauté onion & garlic until soft.
Add tomatoes, broth, oregano, and red pepper flakes. Simmer for 15 minutes.
Stir in coconut milk, season with salt & pepper, then blend until smooth.
Garnish with fresh basil & enjoy.
