Creamy Vegan Tomato Soup

Cold days call for comfort food! This plant-based tomato soup is rich, creamy, and perfect for pairing with a grilled cheese (vegan or otherwise!).

What You Need:

  • 1 tbsp olive oil

  • 1 small onion, diced

  • 3 cloves garlic, minced

  • 1 can (28 oz) crushed tomatoes

  • 2 cups vegetable broth

  • 1 can (14 oz) coconut milk (for creaminess)

  • 1 tsp dried oregano

  • ½ tsp red pepper flakes (optional)

  • Salt & pepper to taste

  • Handful of fresh basil, chopped

How to Make It:

  1. Heat olive oil in a pot, sauté onion & garlic until soft.

  2. Add tomatoes, broth, oregano, and red pepper flakes. Simmer for 15 minutes.

  3. Stir in coconut milk, season with salt & pepper, then blend until smooth.

  4. Garnish with fresh basil & enjoy.

Pro Tip: Serve with crusty sourdough or a dairy-free grilled cheese!
